RASGULLA

INGREDIENTS

2 tsp. All-Purpose Flour (Maida)

1 cup Sugar

½ liter Whole Milk

¼ tsp. Citric Acid (dissolved in 1/2 cup of water) or 3 tbsp. Lemon Juice (Nimbu Arakh)

3 drops of Rose Essence (Gulaab Arakh) or ¼ tsp. Cardamom Powder (Ilaichi Powder)

METHOD

In a pot heat the milk and bring it to a boil. Remove from heat and set aside. To the milk add the citric acid or lemon juice (which ever you are using.) Slowly and gently stir continuously until white curd forms on the surface and separates from whey. When straining this milk, the curd that is obtained is called "chenna". Wash the chenna well under cold running water and twist the cloth that was used for straining to extract water.

Knead the chenna to make a smooth dough. Add the refined flour and knead some more.

Make small balls of equal sizes (about 6-7) out of the dough and set aside.

Now to make the sugar syrup: Mix together the sugar and water in a saucepan and bring it to a boil. Add the chenna balls to the syrup and cook for 15 minutes with the lid partially covered. While cooking the chenna dumplings they will puff up.

Let the rasgullay cool a little at room temperature then add the rose essence. Finally refrigerate and chill before serving.

PINEAPPLE DELIGHT

INGREDIENTS

1 (8 ounce) tin of Crushed Pineapple (drained)

1 pound or ½ package of Mini Marshmallows

¾ package of Graham Wafer Crumbs

½ pint of Whipping Cream

½ cup of Whole Milk

METHOD

Heat the whole milk in a pot for 2 minutes. Melt the marshmallows in the milk. Once it melts, refrigerate it for 15 minutes.

Whip the cream until peaks form in it. Put crumbs in bottom of the pan. Save the crumbs for topping also. Mix the refrigerated portion and add the pineapple to it. Fold in the whipping cream. Put in a pan and add wafers on top. Refrigerate for 1 hour.

RASMALAI

INGREDIENTS

FOR BALLS

1 cup Powdered Milk

1 Egg

1 tsp of Oil

1/4 tsp Baking Powder

FOR SYRUP

1 liter of Milk

6 tbs of Sugar

Seeds of 1 small Illaichi

1 tbs of (chopped) Pista

1/2 tsp of Kevera Essence

METHOD

1) Mix together the ingredients into a dough and form into small oval,slightly flattened balls. Meanwhile boil the milk with sugar and illaichi seeds.

2) When the milk starts to boil add the malai balls. When they start to swell up lower the heat and cook for 10 minutes.

3) Just before removing from heat add kevera essence. Garnish with pista.

Strawberry Cake

Ingredients:

• 1 Package(2-layer size) white cake mix

• 1 Package (3 ounces) strawberry-flavored gelatin powder

• 4 Eggs, lightly beaten

• 1 Cup vegetable oil

• 3/4 Cup mashed strawberries

• Strawberry Icing

• 1/2 Cup butter

• 1 Pound confectioners' sugar

• 1/4 Cup water

How to make Strawberry Cake:

• Take the cake mix and gelatin powder in a big bowl.

• Beat in oil, eggs, water and strawberries.

• Pour the mixture into greased and floured cake pans.

• Bake it for 30 minutes at 350 F.

• Stop baking when a toothpick inserted comes out clean.

• Beat the butter and confectioner’s sugar together for icing.

• Spread Strawberries between cake layers and frost top and sides.

• Cool and frost with Strawberry icing.

• Strawberry Cake is ready.

Coconut cake

Ingredients:

6 oz. flour

3 oz. butter

4 oz. castor sugar

a little milk

2 small eggs

3 oz. desiccated coconut

1 small tspful baking powder

How to make coconut cake:

Cream the butter and sugar,

and add the beaten eggs gradually.

Then add the flour, baking powder and the coconut and,

lastly, a little milk.

Put the mixture into a prepared cake tin and bake in a moderate oven for about 1 1/4 hours.

Ingredients:

1/2 cup butter (melted)

1 cup white sugar

2 eggs

1 teaspoon vanilla extract

1/3 cup + 1 tbsp dutch processed cocoa powder

1/2 cup all-purpose flour

1/4 teaspoon salt

1/4 teaspoon baking powder

handful of pecans(optional)

some chocolate chips (optional)

FROSTING:

3 tablespoons butter, softened

3 tablespoons unsweetened cocoa powder

1 tablespoon honey

1 teaspoon vanilla extract

1 cup confectioners' sugar / Icing Sugar

1 tbsp milk or more see the consistency u want...

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease and flour an 8 inch square pan.

ONLY MIX BY HAND:

Mix with a spatula... melt 1/2 cup butter and stir in sugar, eggs, and 1 teaspoon vanilla.

Fold in 1/3 cup cocoa, 1/2 cup flour, salt, and baking powder.

Spread batter into prepared pan.

Bake in preheated oven for 25 to 30 minutes. Do not overcook.

To Make Frosting:

Combine 3 tablespoons butter, 3 tablespoons cocoa, 1 tablespoon honey, 1 teaspoon vanilla, and 1 cup confectioners' sugar + MILK.

You can even heat this frosting in the micro or on top of the stove :)

Frost brownies while they are still warm.
