اردو ترکی زبان کا لفظ ہے جس کے معنی لشکر یا فوج کے ہیں ۔ 1637ء کے بعد جو شاہی لشکر دہلی میں مقیم رہا وہ اردوۓ معلی کہلاتا تھا ۔ اس لۓ اس کو عام طور پر لشکری زبان بھی کہا جاتا تھا ۔ کیونکہ یہ ہندی،ترکی،عربی،فارسی اور سنسکرت زبانوں کا مرکب تھی ۔ لیکن بعض محققین کا یہ خیال ہے کہ یہ آریاؤں کی قدیم زبان کا لفظ ہے ۔ سر سید احمد خان اور سید احمد دہلوی کا دعوی ہے کہ اردو زبان کی ابتدا شاہجہانی لشکر سے ہوئی اس لۓ اس کا نام اردو پڑا ۔ بہرصورت اس وقت اس زبان کو ہندوی، ہندوستانی ، ریختہ، دکنی اور گجراتی کے ناموں سے یاد کیا جاتا تھا ۔ اردو زبان کو مختلف اوقات میں مختلف ناموں سے یاد کیا جاتا رہا ۔ اس زبان نے ارتقا کی جتنی بھی منزلیں طے کیں اتنے ہی اس کے نام پڑتے چلے گۓ ۔ ناموں کی اس تبدیلی کے پس پردہ مختلف ادوار کی مخصوص تہذیبی و سیاسی روایات کی کارفرمائی نظر آتی ہے ۔ ...

Ingredients: 1) Oil 150 ml 2) Ginger Paste 10 gms 3) Garlic Paste 10 gms 4) Basmati Rice(boiled) 1 kg 5) Black Pepper Powder 10 gms 6) Dried Fenugreek Leaves 2 gms 7) Salt 5 gms 8) Raisins 10 gms 9) Sugar 10 gms 10) Cabbage(chopped) 100 gms 11) Sweet Corn Paste 25 gms 12) Coriander 5 gms 13) Yoghurt 50 gms 14) Orage Juice 50 ml 15) Almonds(crushed) 25 gms 16) Coconut Powder 25 gms Method: 1. In a wok heat oil. Add ginger & garlic & fry till brown. 2. Then add all ingredients, boiled rice, vegetables in wok & mix well & cook for a while. 3. Serve in a dish with a cooked(100 gm) piece of meat. 4. Sprinkle coconut powder & orange juice on top.

Stuffed Mushrooms Ingredients: serves 6 -1 pound of bacon -8 ounces of softened cream cheese -2 tablespoons of chopped green onions -1 teaspoon of hot pepper sauce -2 teaspoons of dried oregano -18 large (stems removed) mushrooms Method: Preheat oven to 375 degrees. Cut bacon into 1 inch pieces. Fry until crisp and drain on a paper towel. Mix bacon, cream cheese, green onion, hot pepper sauce, oregano. Wash mushrooms and remove stem. Fill mushroom caps with cream cheese mixture and place in baking dish. Bake 18-21 minutes or until fork tender.
