chinky 31 Posted April 2, 2008 Bengan Ka Bhurta Ingredients : 2-3 medium-sized eggplant 1 tsp zeera 2 spring onions 2 tbsp Imlli water Salt according to taste 1/2 tsp chili powder 2 tbsp oil 1/4 tsp haldi powder 2-3 tbsp yogurt DIRECTION: 1-Roast the eggplant in hot oven till the skin gets slightly burnt and shriveled. 2-Put the hot eggplant in a bowl of water and remove the skin. 3-In a pot add all the ingredients to the eggplant pulp and cook on high flame till 4-The water has dried up stirring constantly otherwise it will burn. 5-It can be eaten with rice, chapatti or cooled and as a salad. chinky 31 Posted April 2, 2008 (edited) Apple Salad Ingredients : Sauce: 1/4 cup pineapple juice, sweetened 1/4 cup sugar 1 tablespoon flour 2 tablespoons apple cider vinegar 1 egg, slightly beaten Salad: 1/2 cup unsalted peanuts 8 ounces Cool Whip 4 cups apples, cored and diced (6 to 8 apples) 2 cups miniature marshmallows direction -Mix pineapple juice, sugar, flour, vinegar and egg in saucepan and cook on top of stove until mixture boils and thickens, stirring constantly. 2-Then put in refrigerator until mixture cools, usually overnight. Fold peanuts, Cool Whip, apples and marshmallows into sauce mixture and either serve immediately or chill until serving. 3-Apples can be of your choice, but Pink Ladies work great. chinky 31 Posted April 6, 2008 Achar Gosht Ingredients: 1 Kg Mutton 1 Kg Yogurt 2 tbsp Kalvanji 4 - 5 Onions 4-5 tbsp Ghee/Oil a pinch of Haldi 1 tsp White Zeera Salt , Red Chilli Powder to tatse some fresh dhania (Coriander leaves) direction: 1. Cut onion in slices. 2. Fry onion in Oil/Ghee till light brown. 3. Put in Yogurt and Meat and let it simmer on medium heat till meat become tender. 4. Put in salt, kalwanji, chili, and haldi. 5. chinky 31 Posted April 6, 2008 Dessert in a Hurry Serves 6 Ingredients: For lower layer: 5 slices milk bread 1 tbsp. powdered sugar 1 tbsp. cocoa powder 2 marie or other sweet or wafer biscuits crushed coarsely 2-3 tbsp. milk 2-3 drops vanilla essence For upper layer: 1/2 tin milkmaid 1 -1/2 tbsp. cocoa powder 1/2 tbsp. butter Walnuts, cherries, or other decoration. Vanilla icecream or whipped cream (optional) 3 bananas sliced 10 strawberries direction: 1-For lower layer: Run all ingredients except milk and biscuits, in mixie till fine crumb texture is obtained. Pour into a ceramic or glass for setting. Add coarsely crushed biscuits or wafers, and mix well. Press down crumb layer evenly, till slightly firm. Sprinkle milk all over this layer of crumbs. Keep bowl in refrigerator. 2-For top layer: Pour milkmaid into a nonstick pan. Add butter, cocoa, and mix well. Heat over a very low fire, stirring continuously. Cook till the mixture bubbles and is quite thick and sticky. Pour over the crumb layer and even out. Decorate with walnuts, cherries, etc. Chill till well set. Rose Water Toasted Almonds (Baadaam) (sliced) (for garnish) Either of the following two: 2 Soft Mangoes (peeled, cut from pit, and cubed) 5 ripe Bananas (peeled and slices) direction: Combine all ingredients, (except almonds), in a blender or food processor and blend until smooth. chinky 31 Posted April 9, 2008 Aaloo BukharaChutney (Plum Dip) ingredents: ¼ kilogram Dried Plums (Aaloo Bukharay) ½ cup of Sugar or (to taste) Salt (to taste) Black Peppers (Pisi Kaali Mirch) (grounded) (to taste) Red Chilli Powder (Pisi Lal Mirch) (to taste) A pinch of Red Food Color (optional) ½ cup Vineger (Sirka) 2 cups Water direction: In a pot combine: water, salt, red chilli powder, peppers and dried plums; boil until the plums are soft. Add in the sugar and cook on medium heat, until the sugar melts and the mixture becomes a bit thick (approximately for 2 minutes). Add in the food color and vinegar.
