Kashmiri Biryani

Ingredients :

600 gms. Basmati Rice.

100 gms. Each of peas, potatoes, carrots, spinach, french beans and cauliflower.

25 gms. Each of peeled almonds and cashew nuts (powdered or small pieces).

1 tbspn each of green chili, garlic and ginger paste.

Salt & garam masala according to taste.

2 - 2.5 tspn. red chilli powder.

1 tspn. Turmeric powder.

1/2 cup curd, about 2 tspn. Lemon juice.

1 tspn. Powder yellow color (optional).

Cloves, tez patta, dalchini according to taste.

2 medium sized tomatoes' puree, 3 large onions.

1/2 cup each of milk and melted ghee or oil.

direction:

1-Prepare rice & cut the vegetables into small cubes & boil them till sufficiently soft.

2-Fry the pieces of almond & cashew nut till little brown.

3-Heat ghee in a handi, & fry the onions till golden brown.

4-Make a mixture of curd, garlic, ginger, salt, garam masala, turmeric, red chili powder & fry with onions for 2-3 mints. Add the nuts & tomato puree & fry for 4-5 mints on medium flame.

5-Add peas & stir for some time. Add rest of the vegetable & little water & cook on low flame till the gravy is thick enough.

6-Optional Add color to the rice & toss the rice a little.

7-Line a handi with foil & arrange 2/3rd rice on it. Add the vegetable gravy then spread the remaining rice on top.

8-Sprinkle milk & lemon juice on top evenly & garnish with coriander leaves & grated carrot.

9-Keep it covered for approx. 5-6 mints. So that the aroma stays.

Serve hot with chutney.

Fruit Yogurt

Ingredients :

1 pack condensed milk

2 pack cream

yogurt

1 pack un cook jelly ( pineapple)

2 tbsp gelatin

1 can pineapple (only pineapple not juice)

direction:

1.take a bowl and add yogurt, condense milk cream and jelly pack

2. make gelatin by cooking in water

3.now add gelatin in the mixture

4.then add pineapple and stir

5.rfrigrate it max one day or whole night

and enjoy this delicious and nutritious dish

Aloo Chicken Kebab

Ingredients :

potato 1kg

chicken breasts 1/2kg

green chillies, fresh coriander, fresh mint, onion all these things tiny grated 1cup.

salt to taste

black chilli powder 1 tea sp

ground anar dana 1 tea sp

zeera ground 1 tea sp

2 eggs

oil to fry

direction:

1-Boil potatoes and chicken then mash them and mix all ingredient and knead well.

2-Make medium sized kebabs ,beat two eggs and dip kebabs in better and stir frying pan. serve hot with tea/coffee etc.

ALOO MASALA

Ingredients:

1/2 cup Oil

1 tsp Salt

1/4 tsp Onion seeds

Ginger / Garlic paste 1 tsp

1/2 tsp Mustard seeds

250 gms Potatoes peeled and cubed

4 - 5 curry leaves2 cups water

1/2 tsp Turmeric powder

1/2 tsp Aniseeds

1 tsp Red Chilly powder

1/2 tsp Cummin seeds

Direction:

Heat the oil. Fry the onion seeds, mustard seeds aniseeds and curry leaves for a second. Add the turmeric powder, red chilly powder, salt and ginger / garlic with approximately 2 tablespoons of water. Stir and fry till the water dries and you can see the oil. Add the potatoes alongwith 2 cups of water. Cover the pot and cook over a low heat till the water dries and the potatoes are tender.

SMOCKED CHICKEN

Ingredients:

chicken 2lbs

tomato ketchup 1cup

ginger/garlic paste 1tbsp

salt to taste

curry powder 2tbsp

capsicum 1

onion 1 medium

coal 1 small piece

oil 4 tbsp

Direction:

fry chicken in the oil add ginger garlic paste let it cook for 5 mins,add curry powder,1/2 cup water and ketchup let it cook for 15 min on slow fire when chicken is done add capsicum and onions cut in 8 pieces cook on slow fire for 5 min ,burn acoal and put in the curry let it sizzle for 5min take out the coal and serve .green chillies can be added for hot flavour.

Steam Roast Chicken

Ingredients:

1 whole chicken or cut into 4 pieces

1\2 cup yogurt

1 tablespoon ginger paste

1 tablespoon garlic paste

1 teaspoon cumin, whole

1 teaspoon garam masala

1 teaspoon salt

1 1\2 teaspoon red chili powder

1\2 teaspoon black pepper, powder

2 tablespoon lemon juice

Method:

1. Wash and prick the chicken well with the help of a fork or else make cuts lengthwise on the chicken.

2. Mix all the Ingredients and make a creamy paste. Apply on the chicken vigorously and marinate for several hours or overnight in the fridge.

3. Now put the chicken in a steamer or put a big strainer upside down in boiling water in a large saucepan and put the chicken over it. Cover it and let the chicken cook in steam for about 15-20 minutes or till done.

4. Remove the lid simple yet delicious Steam Roast will be ready to serve.

Variations:

Heat 1\2 cup oil in a karahi or deep fryer over high heat and fry the chicken, until golden brown, about 5 minutes

Chicken in Green MasaLa

Ingredients :

Chicken (Murgh) boness less in cubes 1 kilogram

Garlic Powder paste 1 tablespoon

Ginger Powder paste 1 tablespoon

Yogurt (Dahee) 1 cup

Green Chillies (Hari Mirch) 10 count

Black Pepper Powder 1/2 teaspoon

Lemon (Neembu) 1/4 cup

Coriandar Leaves (Hara Dhania) 3/4 cup

Oil (Tayl) 1 cup

Salt 1 teaspoon

DIRECTION:

Heat oil and add chicken pieces, Salt, ginger and garlic paste and yogurt. Cook on low heat until water gets dried. Make a paste of chopped coriander and green chillies and add it to the chicken. Cook for 5 minutes. Now add black pepper and lemon juice and keep on low heat with the lid covered for 3 minutes. Garnish with chopped coriander and chopped green chillies.

u need:

500 gm paneer-cut into desired sized pieces

200 gm gram flourwater

1 tsp red chilli powder

1 tsp turmeric

1 tsp crushed cumin

salt

1 tsp soda bi-carboil for deep frying

chaat masala

how to make:

Make a thick batter with water, flour, red chilli powder, cumin, turmeric, salt and soda bi-carb.Coat each slice with the batter and deep fry.Sprinkle with chaat masala and serve with ketchup or chutney.
