Kiran 2 Posted November 2, 2003 TANDOORI SEEKH KABAB Ingredients: Kheema 1/2 Onion 1 grinded Ginger / garlic 1 tsp Saunf 1 tsp Dhania 1 tbsp Poppy seeds 1 tsp Chana 2 tbsp All spice 1 tsp Green chilli 8 grinded Coriander leaf 1/4 bunch grinded Salt 1 tsp Chilly Powder 1 tsp Papaya 1 tsp Makkai ka atta 1/4 cup Egg 1 Method: Slightly roast saunf, dhania and poppy seeds and grind with chana finely. Squeeze out all water from washed mince and put it in a bowl with grinded onion, ginger / garlic, papaya, grinded green chilli, mint and coriander leaves also add in dry masala, and egg and mix all very well and leave for 1 hour. Then shape into seekh kababs. Heat little oil on tawa and shallow fry it afterwards bake it for 10 minutes and give dam of coal. Share this post Link to post Share on other sites

NaDaN 0 Posted November 2, 2003 Cheese/Paneer Rolls Ingredients: Cottage Cheese (paneer) 250 gms. Potatoes (boiled) 2 large Green Chillies (chopped) 4 Coriander Leaves (chopped) 3 tbsps. Red Chilli Powder 1/2 tsp. Garam Masala Powder 1 tsp. Chaat Masala 1 tsp. Salt to taste Raisins (kishmish) 1 tbsp. Oil to fry Eggs 2 Refined Flour (maida) 4 tbsps. Bread Crumbs 1 cup Method: Grate the paneer. Peel and mash the boiled potatoes. Mix together paneer, potatoes, chopped green chillies, chopped coriander leaves, red chilli powder, garam masala powder, chaat masala, salt and raisins. Soak raisins in warm water for some time before use. Heat oil in a kadai. Make cylindrical shaped croquettes. Beat the egg. Roll the croquettes in refined flour then dip in egg, roll in the bread crumbs. For vegetarians, mix maida with water and dip the croquettes in this mixture. Deep fry in hot oil till golden brown. fati 0 Posted November 2, 2003 Chicken Makhani Ingredients a) 4 -5 chicken breasts (skinned, cleaned, cubed) 1 tsp. chili powder 1 tsp. lemon juice 1 tsp. butter salt B ) Marinade: 2 tbsp. yogurt 1 tbsp. crushed ginger (finely, paste) 1 tbsp. crushed garlic 1 tsp red chili powder 1 tsp mustard oil (or 1/2 tsp crushed rye) 1 tsp lemon juice 1 tsp garam masala salt c) makhani sauce: 1/2 tsp garam masala 2 tsp sugar 1/2 tsp red chili powder 400 g. tomato puree 1 tsp crushed ginger 1 tsp crushed garlic 100 ml creme 1/2 tsp kasoori methi 500 g. butter 2 green chilies salt Instructions a) 1. Add mixture of chili powder, lemon juice, and salt to chicken. Rest 30 minutes. B ) 1. Remove whey of yogurt (hang in muslin cloth 15 min or if using homemade drain excess whey). 2. Mix chili powder, salt, garlic, ginger, lemon, garam masala, and rye. 3. Combine spices and yogurt. 4. Marinate chicken. make sure to coat thoroughly, if short make more marinade. chill chicken 3-4 hours. 5. Skew chicken. cook 425-450 F (depends on broiler) for 8-15 min. Turn skewers every 5 minutes. Watch carefully, chicken to be cooked throughly and a bit toasted. c) 1. Heat butter in med. sized pan. add garam masala. wait till crackles. add ginger, garlic, and 2 green chili. Cook 2 min. add tomato puree, chili powder, garam masala, salt, 1 cup water. boil. reduce heat, simmer 10 min. add sugar & methi. 2. Add chicken. simmer 5 min. add creme. NaDaN 0 Posted November 4, 2003 MATTAR PALAO Yum Yum!! ------------ 1 lb. Green Peas 1 lb. Rice - Pakistani Basmati 8 oz Onion (Red) 8 oz Tomato 1 t Cumin Seed 1 t Cloves 3 Cinnamon Sticks ¸ t Red Chili Powder 1 t Salt 8 oz Butter (or vegetable oil) 1 T Chicken base/or 1 knor chicken cube 3 c Water METHOD ------ a) Gather ingredients B) Coarsely cut onions lengthwise. c) Melt butter solids in a stockpot and put onions in and mix. d) When onions turn dark brown, add 3 cups water. Bring water to boil. Simmer for 5 minutes until water turns brown. e) Strain mixture through cheesecloth and remove all onions. f) Put water back in stockpot and bring to boil. g) Add peas, tomatoes, cumin seed, cloves, red chilies, salt & cinnamon sticks and simmer for 3 minutes. Make chicken stock from base/cube. h) Add Chicken stock and bring mixture to boil i) Add rice. Water level should be 1 inch above rice. Add water if needed. Turn the heat to full. j) When the water is absorbed by rice, cover the pot and turn heat to low. k) Cook until el dente.
